This pudding is fast becoming a firm favorite in our house. I make it with left over yogurt from the market and we love the dairy, creamy goodness. Eat hot with cinnamon sugar or serve cold as a tart.
*3 XL eggs
*250ml all purpose flour
*15ml baking powder
*375ml full cream milk
*10ml vanilla essence or the scraped out seeds of half a vanilla pod.
-Cream the butter and sugar.
-Add the eggs one at a time. beating well after each addition.
-Sift the flour and the baking powder.
-Add the milk, yogurt and vanilla.
-Blend well till you have a thick creamy batter.
-Pour the batter into a well greased oven dish. (I used a 25x25cm square pyrex dish)
-Pop into a preheated 180*C oven for 35 minutes.
-Serve hot with cinnamon sugar.
