Tomato Bredie

We love this traditional South African Dish. It is the perfect winter comfort food. Bredie means stew or casserole. My Mom (bless her) was never much of a cook, but this and roast lamb she excelled at. Its all about how you brown the meat as a base.

Brown the onions, garlic , beef and beef stock together  until caramelised.

*500g stewing beef cut into cubes
*1 onion coarsely chopped
*2 crushed cloves or 10ml of garlic flakes
*1 beef stock cube
*1 small can of tomato paste
*7-8 fresh tomatoes peeled and quartered or a can of whole peeled tomatoes
*10ml of worcester sauce
*6 medium potatoes diced
*20-30ml brown sugar
*10ml oreganum
*1 red paprika chilli or 5ml of mexican chilli (optional)
*garlic and herb spice
*500ml water

Pop the tomatoes in boiling water to remove their skins.

Ready to be added to browned meat in pot.

-Add tomatoes, potatoes, sugar, spices and about 500ml of water to the browned meat and simmer until the potatoes are cooked and are disintegrating into the tomato sauce. (Normally about 30-45 minutes)
-Serve hot on a bed of rice.
