The Indian and Malay peoples love to blend their own spice mixes for use when preparing their food. These mixes are called masalas, and fall under either a green or red masala. Any blend of spices is called a masala and they are made fresh so as for the flavors to be acute. Of course certain spices are always present, like coriander, cumin and chilli.

We make what we call a tikka paste, but it really is a red masala. I prepare it and keep it in a glass bottle in the fridge to use as needs be. I love to make it with chicken and yogurt and fresh lemon juice.

*0.25ml salt
*15ml lemon juice
*150ml white wine vinegar
*150ml oil of choice (seed, nut or olive)
*30ml coriander seeds ground
*30ml cumin seeds ground
*20ml garlic crushed
*30ml paprika
*15ml mint
*15ml garam masala
*15ml ground ginger
*10ml crushed chillies
*2.5ml ground tumeric

Heat oil in a pan. Mix all dry ingredients together with a little water, vinegar and lemon juice to form a thin paste. Add to oil in pan and allow to simmer for about 10-15 minutes. I put it into a glass jar as it does tend to stain plastic bowls. Allow to cool down before refrigerating.
