Sugar as we know it, is a fairly modern foodstuff. Appearing in the Victorian era, and being rather costly, only the very rich could afford it, but despite this it took off as a preserver of foods especially in jams and preserves.
On Saturday I met a lady on the market, who has cut sugar completely from her diet. She uses fruit sugars and honey as a sugar substitute. This is her recipe for rooibos tea. She brews it in the morning and drinks it during the day.
*1 large pineapple
*4-6 rooibos teabags
*1L of water
She cuts up the pineapple and uses the skins, the cut up fruit and other ingredients to make the tea. She allows that to stand and drinks as she needs to during the day. She says she also adds other fruit to that mix as she feels like.
